Super healthy, super quick, and unreal tasting tuna melt! This is a great meal when you’re in a pinch for time, or don’t feel like standing in the kitchen. Sometimes I pre-make the tuna so I literally just have to thow it under the broiler when I get home. Feeling super lazy? Just toast the bread and throw the tuna mixture on top without warming :)
Ingredients:
- ½ cup chopped celery
- 1 small onion, chopped
- 1 can organic Raincoast tuna (this is an organic brand that is far better tasting and lower in mercury), drained and flaked
- 1 ½tbsp Hellman’s mayo (this is far less processed the Miracle Whip)
- 1tbsp lemon juice
- 1 Ezekiel English muffin or brown rice wrap
Instructions:
- Set oven to broil
- In a large skillet over low heat, cook the celery and onion until softened.
- Add the , tuna, mayo and lemon juice to the skillet.
- Continue to cook the mixture until the cheese melts and the mixture is warmed through.
- Place mixture on top of Ezekiel English muffins or brown rice wraps.
- Place the tuna mixture on a cookie sheet and cook until the edges are browned.
- I like to top this with Frank’s hot sauce and seasoned salt!
