Chicken Tomato and Avocado Salad | Royally Fit

This salad has a wonderful summer taste to it. The avocado adds a creaminess to the salad not to mention the benefits of the healthy fatty acids and protein in it. Try to avoid the deli chicken when possible. It’s so loaded with processed gasses and sodium, you don’t need it. Ladies, it’s just as easy to make a turkey breast or even chicken breast. It’s an awesome lunch to whip up the night before and bring the avocado along with you in the morning. Makes 4 servings.

Ingredients:

  • 1 large head green leaf lettuce, torn into pieces (about 6 cups) kale, spinach, arugula
  • Grilled or baked chicken breast
  • 2 large tomatoes, cut into wedges
  • 1 avocado, cut into bite-size pieces
  • 1/2 red onion, thinly sliced
  • 1/4 cup goat’s feta cheese
  • 4 tbsp. extra-virgin olive oil
  • 2 tbsp. balsamic vinegar
  • kosher salt and black pepper

Instructions:

  • Divide the lettuce, chicken, tomatoes, avocado, onion, and goat’s cheese among bowls.
  • In a small bowl, whisk together the oil, vinegar, ½ teaspoon salt, and ¼ teaspoon pepper. Drizzle over the salad.
