If you like homemade pea soup, but you’re looking for something a little faster, try this new fashioned bean soup to satisfy your craving. Although my Mom and Dad make some of the most comforting soups and stews I’ve ever had, they decided to waver from their usual, and try something new. They introduced me to this soup last week, and I’m definitely a fan!
Ingredients:
- 1 pound dry navy beans (soak overnight)
- 1½ quarts water
- 1 pound lean, boneless ham, cut into cubes
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ cup chopped celery leaves (or just use the stalk)
- 1 medium onion, chopped
- 1 bay leaf (optional)
Instructions:
- Drain the soaked beans
- Combine all ingredients in Crock-Pot
- Cover and cook on low for 8 to 10 hours OR High for 4 to 5 hours
Serves 6
